After having crumbled the curd into small pieces and added the necessary amount of salt, you will spin the dough with hot water, with your hands or using a wooden spatula. Once the dough will make nice threads over a good length, you will make your mozzarella balls. These will then be immersed in cold water. You can then taste your work over a glass of wine in a friendly moment.
